Fissler's Blue Point Pressure Pan set does it all. It grills, sears, frys, saute's, steams, braise, and pressure cooks. This set includes the 1) pressure skillet, 2) the pressure lid, 3) wire basket, and 4) glass lid. The pressure skillets' 10.2" diameter and 4.2 quart capacity makes it versatile enough to cook smaller meals but large enough to handle family dinners too. The interior of the skillet features the Novagrill surface. The honeycomb texture keeps food from sticking with much less oil than convential pans. But unlike non-stick pans, foods come out beautifully browned. The Novogrill surface works in conjunction with the CookStar all-stove base. Rusogollas are essentially bengali sweets and are made from paneer.. ( I have already posted the paneer making in my channel ) This is how you make rusogollas.. first off knead the paneer into a fine dough .. ( it will be owdery at first, but as you go kneading it , it will show some cohesion and form a dough ). Make small balls from out of the dough and insert into the center of each of them, a small peice of sugar cube.. This will make the paneer juicy and porous when cooked.. Next make a sugar syrup with 200 to 400 gms or more of sugar ( depending upon your need for how sweet it should be ) in one litre of water.. mildly heating the water if necessary to expedite the process of dissolution ..Add the paneer balls into the surface and place the vessel in a pressure cooker and cook for about 5 minutes with the weight valve in place .. After removing from the cooker, remove the rusogollas into a separate vessel and use the syrup for the remaining rusogollas. Place all the rosogollas in a vessel and refrigerate.. Serve cold.. EAT ! Dont worry if the rusogollas do not become entirely spherical. The sugar cubes are inserted so that when the paneer is cooked, the sugar dissolves and leaves a cavity containing sugar syrup within the rosogollas...

Here I make my version of Sweet Potato Pie. I infused it with Maker's Mark Bourbon and separate the eggs, whipping the whites separately to create a soufflee'd version. Alternatively, I use phyllo dough instead of pie crust to create a crunchy crust. Bourbon-Sweet Potato Pie 2 medium sweet potatoes, peeled and cut into 2" cubes 1 teaspoon ground ginger 1/2 teaspoon fresh-grated nutmeg 1/2 teaspoon pure vanilla extract 1 teaspoon cinnamon 1/4 teaspoon salt 4 large eggs, separated ¼ cup packed light-brown sugar 1 cup half and half 1/4 cup unsalted butter, plus 1/2 cup melted 1/4 cup all-purpose flour 1/4 cup Maker's Mark bourbon 1/3 cup plus 1/3 cup granulated sugar 1/2 teaspoon cream of tarter 8 sheets frozen phyllo dough , thawed in refrigerator Preheat oven to 375 degrees. Put cubed potatoes in pressure cooker along with ½ cup water and set for six minutes. When pressure cooker is done, do a quick pressure release to release steam and once it is all out you can remove the top. Place cooled, cubed potatoes into a ricer and process into a large bowl until you roughly have 1 1/2 cups. Measure out ginger, nutmeg and cinnamon, placing half of each into a small bowl to divide them evenly. Using one of the bowls of spice mixture, place in a large mixing bowl along with vanilla, salt, egg yolks, bourbon and brown sugar; set aside. Make a roux by melting 1/4 cup butter in a medium saucepan over medium-high heat, then whisking in the flour - add in half and half, whisking until ...

We have a unique way of pressure canning our soups to make sure each quart is the same. Nothing's like opening a canned jar of "summer" in the cold of winter. We hot-packed the sesasoned broth; however, we didn't pre-cook the veges because they would be pressure canned for so long. Veges can be blanched; Chicken was pre-cooked. Finished product tastes marvelous; the vibrant colors dull somewhat with the canning (cooking), as expected. I'll be posting a video of our entire canned collection for the winter as well as where we store it. We can all sorts of things from peanut butter to Thanksgiving turkey leftovers and broth. :-)
